Minestrone Soup

Ingredients
Chicken broth- Trader Joe's, organic, low sodium, 5 servingsParmesan- Frigo, shaved, 0.25 cupSpinach, fresh, 2 cupGreen Beans (snap), 2 cupCarrots, raw, 2 cup, choppedBaby lima beans- Great Value, 5 servingSweet peppers (bell), 1.5 cup, choppedTrader Joe's Organic Tomato Sauce, 7 servingTrader Joe's Organic Diced Tomatoes, 3.5 servingCannellini Beans- canned, 1.75 cupOnions, raw, 1 medium (2-1/2" dia)Garlic- 5 clovesZucchini, 2 cupSquash, yellow, 2 cupRosemary- Fresh ONE SPRIG (wouldn't let me choose this above)Basil- Fresh 2 TbspBay Leaves- Fresh 2 leaves (WHOLE)Italian Parsley- Fresh, chopped 0.25 cup Salt & Pepper to taste
Directions
Spray slow cooker with cooking spray (I used olive oil spray). Combine all ingredients except for spinach, zucchini, and squash and cook on HIGH for 8 hours. About 45 minutes before the soup is finished add the remaining ingredients.
