Low Carb Sandwich Bread

2 3/4 cup gluten free low carb baking mix 11/2 cup heavy cream1/2 cup water1/2 cup coconut oil, melted2 tsp cider vinegar6 eggs, well beaten1 tsp sea salt2 tsp baking soda
Preheat oven to 350 degrees.
Line a medium size loaf pan with parchment paper. Lightly grease the ends.
Combine all ingredients in a large bowl. Mix well so there are no lumps.
Spread into loaf pan.
Bake for 1 hour.
Allow to cool before removing from pan.
Store in the fridge for several days in a sealed container.
Also, I like to pre-slice the loaf, then place waxed paper between the slices and freeze. The wax paper prevents the slices from sticking together. You can just take out the slices you need without thawing the entire loaf.
Serving Size: makes 20 slices
