Light 'n Fluffy Cottage Cheese Pancakes

1 cup non fat cottage cheese6 egg whites1 tsp pure vanilla extract2 Tbsp sugar free maple syrup3/4 cup flour2 tsp baking powder
1. In a food processor, combine the cottage cheese and egg whites and puree until well blended, about 30 seconds. Add vanilla, syrup, flour, and baking powder and pulse just to combine.
2. Preheat a griddle over medium-low heat and drop the batter by the Tablespoonful onto the heated surface.
3. Allow the pancakes to cook completely on one side before flipping. Bubbles will appear on the surface to indicate the it is ready to be flipped, about 4 - 5 minutes per side.
Serving Size: Makes 14 mini pancakes
