Veg Healthy Shep Pie

Ingredients
4 cups mushrooms1/2 large zucchinionions, garlic and ginger to taste1 cup green lentils2 large sweet potatoes3 tbsp. olive oil4 tbsp. tapioca starch or flour or corn starch2 c almond milk1/4 c parm cheese
Directions
slice and steam veg
rinse, soak and boil lentils until tender
mix together in baking dish
boil sweet potatoes with salt, drain and mash with 1 tbsp. olive oil
in pan, mix remaining oil and flour/starch and cook a few moments, then wisk in almond milk, salt and pep, cheese and any herbs youd like
mix the sauce with the steamed veg and top with mashed sweet potatoes
bake 30 minutes or so.
