Fried Eggplant

Ingredients
3 lb Eggplant8 T Extra Virgin Olive Oil1 Cup Bread crumbs, dry, grated, seasoned2 medium Eggs12 T Evaporated Milk2 tsp Salt4 tsp Italian Seasoning
Directions
Wash eggplant, cut off ends & discard. Slice in 1/4 inch slices. Mix the eggs with the milk. Put the bread crumbs in a bowl mix with salt & italian seasoning. Heat 2 T of extra virgin olive oil. Dip eggplant in egg/milk mixture, then dredge in bread crumbs. Place in medium hot oil, turn only once.
