Zucchini Rice Soup

Ingredients
3 cups shredded zucchini1 medium onion chopped3 cloves garlic minced4 cups chicken broth3 Tablespoons White rice uncooked1 large egg beaten3 Tablespoons grated romano cheese2 Tablespoons dried parsley
Directions
saute onion and garlic in olive oil
add broth and 3 Tablespoons rice
simmer covered for 10 minutes
add zucchini an cook for additiional 15 minutes UNCOVERED
Beat egg, parsley and chesee and add to soup

Salt/Pepper to taste
