Zucchini Apple Crisp

Ingredients
Zucchini, peeled, and sliced (8 cups)3/4 cup lemon juice1 tsp. nutmeg2 tsp. cinnamon1/2 cup sugar1 cup flour1 cup rolled oats1 1/3 cup brown sugar, packed2/3 cup butter, softened
Directions
In a large skillet, placed peeled and sliced zucchini with lemon juice. Cook over medium heat for 15 minutes, stirring occasionally. Then add nutmeg, granulated sugar, and cinnamon. Toss and coat well until well mixed. Remove from heat. Pour zucchini slices into a 9x13 inch pan. Preheat oven to 375 degrees. In a separate bowl, mix flour, brown sugar, oats, and softened butter. When well mixed, sprinkle over zucchini slices and bake for 50 minutes.

Serving Size: Makes 12 servings in a 9x13 inch pan
