Dry ingredients:240g plain flour75g rolled oats3 tsp baking powder40-100g pecan nuts2 dessertspoons of cinnamon1 tsp salt65g brown sugarWet ingredients:190g greek yogurt115ml sunflower oil (sorry mum)75ml coconut milk60g honey3 eggs1 tsp vanilla extractYummies:230g peeled bananas 100g of juicy dates,I love madjool dates
Preheat ovan to 180 degrees
Mix all dry ingredients together.
Mix all wet ingredients together in a separate bowl.
Mash the yummies together then add them to the wet mix.
Mix the wet and dry ingredients together without overworking the mixture.
Divide the mix between your muffin moulds or cases, you can fill them to the top.
Pop in the over for 20-25 mins until firm and golden.
