Low-Carb Cream Cheese Pancakes

Cream Cheese, 2 tbsp Egg, fresh, whole, raw, 2 large Cinnamon, ground, 2 tspTruvia Natural Sweetener, 1 packetVanilla extract, 1tspButter, salted, 1.5 tbsp

Mix all ingredients except butter together in a medium bowl with a hand mixer. Batter will be thin and bubbly. Let settle a few minutes before cooking.
Heat a skillet. Place 1/4 of the butter on the skillet and then pour 1/4 of the batter. Like normal pancakes, let the edges begin to brown and some bubbles rise on the surface before you flip.
Repeat to cook all 4 pancakes. Makes thin, crepe style pancakes ideal for a Keto diet.
