Okra, 1 lb,Onions, raw, 1 cup, chopped Red Ripe Tomatoes, 1 cup, chopped Pepper, black, 0.25 tsp *Hot Chili Peppers, 1 pepper, deseeded and chopped very fineCilantro, raw, 3 tbspsEgg, fresh, 4 large (remove)Garlic, 3 cloves, Olive Oil, 2 tbsp
Wash and pat dry the okras. Cut into 1 cm pieces. Fry the onion in a non stick pan, in olive oil until transparent. Add hot chili pepper. Add salt and pepper.Add chopped okra and tomatoes. Cook covered for about five minutes, or until the okra is cooked. Beat the white of the eggs until quite stiff, add the yolks (optional for those suffering from cholesterol), add colantro and pour this mixture over the okra. Cover and cook on slow flame for two minutes or until the egg has formed.
Cut diagonally into as many pieces as required.
