Poser Potatoes (Cheesy Cauliflower)

Ingredients
Preheat oven to 400 degrees. Clean & cut cauliflower head, removing outer leaves & large stems. Cut into 8 pieces. Microwave the cauliflower without water until tender. Chop finely 1/4 cup onion & 1 clove garlic. Sauté these in saucepan with 2 teaspoons olive oil. Remove from heat. Add 1/4 cup Chobani 0% fat Greek Yogurt to onion mixture. Pour off any accumulated water from the cauliflower. Blot cauliflower with paper towels or clean dish towels to get out extra moisture. Add cauliflower to saucepan. Stir well with wooden spoon (vigorously!) to smooth the lumps. Mix the 1/4 cup cheddar cheese with 40 grams of grated Parmesan cheese. Reserve enough to sprinkle the top. Mix the rest of the cheeses into the saucepan. Transfer cheese & cauliflower mixture to oven safe dishes or casserole. Cook till top cheese & mix bubbles.
Directions
