GF Carrot Cake/Souffle

Ingredients
1.5 cups grated carrots1 container Siggi's Coconut yogurt2 eggs1/5 cup dried cranberries2 tbsp maple syrup1 tsp cinnamon1 tsp ginger
Directions
Grate all the carrots (this is the worst part, so give the duty to a child or watch a good TV show while you grate em up!)
Mix everything together in any order you like, it truly doesn't matter. Bake for 30 minutes at 350, testing after 25 minutes to see if a toothpick comes out clean.

The little souffle/cakes will deflate a little when cooling. This is sad, but inevitable. Don't worry :)
