Ingredients
4 large Eggs1 tsp. Kraft Parmesan cheese1/2 cup Frozen Spinach1/2 cup Mushrooms, fresh, diced1/2 cup Mozzarella cheese shredded 1 tsp Olive Oil
Directions
Heat large skillet on med-low with olive oil. Add frozen spinach to the skillet and spread evenly to warm. Wisk together eggs, parmesan cheese and mushrooms. Check spinach, if no more ice crystals appear, add egg mix, cover, and increase heat to medium. Cook eggs through, then sprinkle mozzarella over top and let melt.
