Spinach and Turkey Bacon quiche

Ingredients
10 eggs6 slices of turkey bacon2 cups of fresh or frozen spinachsalt/pepper to taste1/2 shredded cheddar cheese
Directions
Preheat oven to 350, spray muffin tins with nonstick spray (I used a mini muffin pan, which yields 24 mini quiche). Cook bacon until crispy (I found this easier to do in the microwave). Saute spinach, add chopped bacon pieces. In a bowl, beat the eggs with any spices you may want to use.
Place the spinach and bacon mixture evenly into the muffin tins. Pour the eggs over each, until about 3/4 full. Sprinkle cheese on the top of each; bake for 25 minutes.

Serving Size: Makes 24 mini quiche
