Cream of Asparagus Soup

1 lb asparagus, sliced in 1/2" segments2 cups reduced sodium chicken broth3/4 tsp fresh thyme, divided1 bay leaf1 garlic clove, chopped1 Tbsp flour2 cups unsweetened almond milk1/4 tsp ground nutmeg2 tsp I can't believe it's not butter light 1/4 tsp grated lemon rind
1. In a large pot over medium-high heat, combine asparagus, broth, 1/2 tsp thyme, bay leaf and garlic and bring to a boil. Reduce heat, cover, and simmer 10 minutes. Discard bay leaf. Using a stick blender, process and blend until smooth.
2. Place flour in the pan. Slowly add the milk, stirring constantly with a whisk. Add pureed asparagus and ground nutmeg and stir to combine. Bring mixture to a boil and reduce heat; simmer 5 minutes, stirring constantly.
3. Remove from heat. Stir in 1/4 teaspoon thyme, butter and lemon rind. Serve immediately.
