Chunky Potato Soup

Ingredients
6 cups, cut potatoes1/2 cup chopped onions1/2 cup chopped carrots4 cups skim milk6 cups water3 tbsp. unsalted butter2 tbsp. fresh parsley2 tbsp. fresh cilantro2/3 cup shaved/shredded parmesan cheese4 tbsp. flour1 tsp. salt1 tsp. black pepper1/2 tsp. Tony Chachere's Origianl Creole Seasoning4 tsp. low-sodium vegetable bouillon4 tsp. Italian seasoning
Directions
Bring water to boil, add fresh vegetables and herbs-let boil for five (5) minutes. Add milk and butter, boil for another three (3) minutes. Add spices and seasonings, then add flour and cheese.
Stir WELL so the flour & cheese do not clump together. Serve when vegetable are tender.
