Almost Fat-Free(!) Banana Mini Muffins

2 eggs - beaten4 very, very ripe bananas, mashed1/4 cup soy milk (or milk of your choice)1 cup whole wheat flour1/2 cup almond flour (meal)1/2 cup white flour1/2 cup brown sugar1 teaspoon baking soda1/2 teaspoon salt1 teaspoon cinnamon1/2 cup dried cranberries1/2 cup chopped pecans
Preheat oven to 350 degrees. Coat mini muffin tins with non-stick spray or line with paper muffin cups.
Mix all dry ingredients in one bowl. In a separate bowl, mix all wet ingredients. Add the wet to the dry and mix JUST UNTIL COMBINED - That's it! Add craisins and nuts, if using.
Bake for 10-13 minutes or until a toothpick comes out clean. Time depends on how full you've got the muffin cups and your oven, of course.
Cool in tins about 15 minutes and then cool on a rack (or devour now!).
Serving Size: 1 mini is a snack, have two or three for breakfast!
