Cheeseburger Soup

Ingredients
½ lb. ground beef2 T minced garlic1 large carrot, grated1 medium onion, chopped1 stalk celery, chopped3-4 large potatoes, peeled and chopped2 cans (or 4 cups) chicken broth1 can cheddar cheese Parsley, basil, and black pepper to taste4 T butter¼ cup flour1 ½ cup milk
Directions
Brown and drain ground beef
Add garlic, carrot, onion, and celery – cook on medium heat until tender
Add potatoes, broth, and cheddar cheese
Add parsley, basil, and black pepper to taste – bring to a boil, reduce heat, cover, and simmer 10 minutes or until potatoes are tender
In a small skillet melt butter over medium-high heat – add flour, stir constantly for 3-5 minutes until bubbly
Add butter mixture and milk to soup, stir and allow to thicken
