Cauliflower Pizza Bites

Ingredients
2 cups Cauliflower, grated2 egg whites1 cup non fat cottage cheese, drained1 tsp Oregano2 tsp Parsley1/4 Tsp Garlic Powder12 turkey pepperoni slices
Directions
1. Preheat oven to 450 degrees. Lightly spray a mini muffin tin with cooking spray and set aside.

2. In a hot frying stir fry the “cauliflower rice” until the slightly translucent, about 6 - 8 minutes. Place in a bowl and allow to cool.

3. Place all remaining ingredients in a food processor and pulse until smooth.

4. In a large bowl, combine both cauliflower and blended ingredients and mix well. Evenly spoon mixture into the prepared muffin tin. Press down evenly and firmly.

5. Bake for 25 - 30 minutes or until lightly browned. Remove from oven, top each with 1/2 piece turkey pepperoni and continue baking for an additional 5 minutes.

6. Remove from the oven and allow to cool at least 10 minutes before removing from pan.

7. Once cool remove from muffin tin. Serve immediately with a side of marinara dipping sauce.
