Sweet Potato soup

Sweet potato - baked in skin - 3 medium Garlic - 3 cloves mincedOnions - 1 cup choppedRed Pepper - 1 cup choppedSerrano Pepper - 2Tomatoes - 2 cups choppedBasil - 10 leaves (or more if you like it) choppedChicken Broth - Low sodium - 2 cups (8 fl oz)Spinach - 4 cupsWater - 2 cups (8 fl oz)Salt - 2 tspWhite pepper - 1 tsp
Wash sweet potato & roasted for 30' to 45'
Cook onion, red pepper, serrano pepper & garlic for 2 min - Add tomatoes, basil, salt & peper. Cook for 5' and add chicken broth. In high heat, cook it for 10' & add spinach.
Let it simmer while you peel the sweet potatoes.
Add the sweet potatoes to the pot & let it simmer for 10' to 15' - Add 1 cup of water at the time (I like my soup thick)
Turn off the heat & let it cool down before to put it on the blender. Blend it & it's ready to go!
