Cilantro-Lime Chicken Salad

Ingredients
2 Ripe Tomatoes1 Cooked Chicken Breast (no skin)Fresh Lime Juice (1/2 lime)1/2 ripe Avocado (optional)2 Tbsp or more of fresh cilantro leavesSalt (to taste)Cumin (if desired)
Directions
Dice tomatoes and chicken. Sprinkle with fresh lime juice. Add salt (to taste) and fresh cilantro leaves, mix together.

If desired, chop 1/2 avocado and add to salad. Mix gently. Also, cumin and other mexican spices can be added to give salsa-like flavours.

Makes a generous lunch-sized salad or enough filling for 2 1/2 pita pockets or two small wraps.
