Lunch Salad

Ingredients
1 c mixed baby salad greens4 cherry tomatoes1-2 radishes, thinly sliced1 fresh scallion (greens included)2" english cucumber, quartered and sliced5 - 6 thin 1 inch strips of rare roast beef1 tsp Danish Blue cheese
Directions
1 c mixed salad greens, halved cherrry tomaotoes, sliced cucumber., scallions and radish. Top with 5 or 6 narrow strips or rare roast beef (preferably home cooked). Crumble 1 tsp of Danish Blue (Rosenberg). Toss with 2 tbsp of balsamic vinagrette when ready to serve and a good grind of fresh black pepper. That's a lunch!
