Eric's Black Bean Pumpkin Quinoa burgers

Ingredients
Black beansPumpkin puréeQuinoaChipotle pepperBread crumbsOnionGarlicOilSeasoning
Directions
Cook quinoa according to package instructions
Saute onion, garlic and chipotle in oil till soft, add half the beans and all pumpkin and seasoning, cook till rather dry, about 10 min.
Purée hot mixture with 3/4 cooked quinoa in food processor. Add bread crumbs, remaining beans and remaining quinoa, pulse 5-10 times to combine.
Heat oven to 350
Put sheet parchment paper on cookie sheet, spay with cooking spray, divide mixture into 6 patties on parchment. Cook 20 min, flip, cook 10 more min.
Serve on whole wheat buns with your choice of condiments.
