Nonna's homemade barley salad

Ingredients
Ingredients:Barley, pearled, cooked, 1 cup Radishes, 2 medium (3/4" to 1" dia) thinly sliced*Mancini Sweet Roasted Peppers, 1 oz *Avacado, whole, medium 1 serving = 1 medium whole avacado, 1 serving (Cucumber (peeled), .3 cup, pared, chopped (*Extra Virgin Olive Oil, 1.5 tbsp Pepper, black, 1 dash (Salt, 1 dash (remove)*Balsamic Vinegar, 1.5 tbsp *Pine Nuts, 1 tbsp
Directions
Cook barley - about 50 minutes
Strain and Cool barley
Cut all vegetables into bite size pieces
place barley and all other ingredients in a bowl and mix
place on plate and enjoy!
