Banana Nut Bread

*1.75 C. Flour*1.25 tsp baking powder*.5 tsp baking soda*.5 tsp salt*1 (3.5 oz) pkg instant dry pudding mix (banana cream or vanilla work good)* 1/3 c. butter (may use .5 C. shortening - but will alter calories and fat grams in recipe)*1 large egg + 1 egg white*3 Tbsp 1/2% milk*1 tsp vanilla extract*1 tsp ground nutmeg*2 tsp ground cinnamon*3-4 large bananas (mashed)*1 C. walnut pieces (chocolate chips would probably be really good also)
*Preheat over to 350 degrees Fahrenheit
*Combine flour, baking powder, baking soda, salt, and pudding mix in a smaller mixing bowl (set to side)
*In separate (medium/large) mixing bowl combine butter and sugar, beat on high until fluffy (approx. 2 mins)
*Add egg and egg white, one at a time. Add milk, vanilla, and mashed bananas. Mix ingredients together on low.
*Continue to mix on low while adding flour mixture to wet ingredients.
*Fold in walnuts and spread mixture into 8 inch * 8 inch baking dish.
*Bake for 1 hour or until knife comes out clean.
*Allow 10-20 mins to cool.
Serving Size: Makes 14 - 1inch slices
