Hollandaise Sauce

Ingredients
3 egg yolks1/2 C butter, melted4 Tbsp boiling water1 Tbsp lime/lemon juicepinch cayenne pepper
Directions
Beat egg yolks in top of double boiler. When they start to thicken, add 1 Tbsp of boiling water. Mixture will thicken again, add another Tbsp water. Keep repeating this until you've added all 4 Tbsp of boiling water.

Once all water is added, slowly add melted butter, whisking constantly until well blended.

Add lime juice and cayenne pepper and mix well.
