Simple Pasta

Ingredients
Directions
8 oz egg noodles (I used regular, since that was all I had on hand), which are cooked according to instructions.2 roma tomatoes, or one medium size fresh tomato2 cups green beans (I used frozen)2 Tablespoons EVOO
Cook pasta according to package instructions
Drain, then cook frozen green beans in the pasta pot with 2 Tbs. olive oil.
Once beans are thawed, add diced tomato, then pasta to mix all together.
This is great with a sprinkle of parmesan or swiss cheese (both hard cheese which us lactose intolerant people can handle easier).
Feel free to add more veggies that you have on hand! Let me know what you think- it would also be perfect along side grilled chicken, salmon, or shrimp.
