Ingredients
1 medium onion, diced1 Tbsp. vegetable oil3 small potatoes, peeled and cubed2 medium carrots, sliced3 cans (14.5 oz each) chicken broth3 C water2 Tbsp parsley flakes2 tsp dried basil1 tsp dried oregano1 garlic clove, minced.5 tsp pepper1 can (15.5 oz) great northern beans, rinsed and drained1 can (15 oz) pinto beans, rinsed and drained1 can (15 oz) garbanzo beans, rinsed and drained3 C chopped fresh spinach
Directions
In a Dutch oven, saut� onion in oil. Add the next nine ingredients. Simmer, uncovered, until vegetables are tender. Add beans and spinach; heat through.
