Rhubarb coffee cake

Ingredients
* *Canola Oil, .33 cup (remove) * Egg, fresh, 2 large (remove) * Maple Syrup, 1 cup (remove) * Yogurt, plain, low fat, .5 cup (8 fl oz) (remove) * *Milk, 2%, .5 cup (remove) * Salt, 1 tsp (remove) * Baking Soda, 1 tsp (remove) * *Rhubarb, 2.5 cup, diced (remove) * Flour, whole grain, 2 cup (remove)Topping: * Walnuts, 2 tbsp, chopped (remove) * Cinnamon, ground, 1 tbsp (remove) * Granulated Sugar, 6 tsp (remove)
Directions
Mix wet ingredients, then add wet. Place in 9x13 pan, and sprinkle with topping. Bake at 350 for 45-60 minutes. Makes 12 servings.

    Very easy to make. I like using maple syrup instead of sugar or corn syrup in recipes, since it has more nutrients and is less processed. I didn't have any plain yogurt so I used some fat free stoneyfield superfruit yogurt (6 oz) and 2 oz of blueberry Kefir instead. - 6/12/10
