Ingredients
Soak black beans overnight, drain and cook on the stovetop until tender. Let cool.Chop cucumber, tomato, red pepper, and combine with the kernels from 2 ears of corn. Add 3 cups cooked black beans.For the dressing, combine juice from 2 limes, 4 tbsp olive oil, 1 tbsp honey, 1 tbsp vinegar (I used homemade hot pepper vinegar), salt, cayenne pepper, and chili powder to taste. Mix well.Makes approximately 9 1-cup servings.
