Spinach, Tomato, Potato Fritatta

Ingredients
Dice tomato 1 cupspinach fresh 1 cuppotato diced 1.5 cupyellow onion diced .25 cupegg beaters 1 cupolive oil 2 tbspsalt 1 tbsp
Directions
(all of it can be cooked in one iron skillet, no need to transfer)

cook potatoes in iron skillet, add onion, then tomato & spinach, finally add in egg beaters, cook for 3-5 min til golden brown on bottom. place under broiler for 3-5 min or until top is golden brown. serve.
