earth balance, onion, veggy broth, leeks,lemon,potato
cook all solids save half of the potato, save the green onion to garnish, with 4 cups of broth for 20 min. or until potatoes are soft. Put all hot solids into blender or vitamix and blend until smooth. Return potato leek paste to the hot liquid as well as potato's that were reserved and cook for another 20 min. or until potato's are soft. garnish with shaved green onions
