Paula's Poon Flax Muffins

Ingredients
2 eggs10 tsp splenda2 tbsp. PLUS 1/4 cup canola oil4 tbsp. water1 tbsp. vanilla1 cup flax meal1/2 tsp baking soda1 tsp baking powder2 tbsp. cinnamon (I added a bit more)
Directions
In a medium bowl beat egg with a fork, beat in oil, water, & vanilla. In another small bowl mix dry ingredients, then stir into wet mixture. Let thicken for 5 mins then spoon into well greased unlined muffin tin. Bake at 350 for 12-15 minutes, or until lightly brown and set to touch. Remove from pan immediately and let cool. Store in the fridge. May be frozen
