Oreo Cheesecake Cupcakes

12 Oreo cookies10 oz Cream Cheese (16 will make fuller/thicker cheesecakes)1/2 Teaspoon Vanilla Extract2 Large Eggs1/2 Cup Sour Cream (optional, I didn't use it this time)
1) Preheat Oven to 275 Fahrenheit.
2)Line a muffin tin with muffin/cupcake cups. Place one oreo cookie at the bottom of each cupcake cup. You can split one cookie into two to cut down on the carbs. ( I made 8 with the oreo on the bottom and 4 with a butter and soy flour crust).
3) Mix cream cheese and stevia together, a few packets at a time. Then beat in eggs one at a time. Crumble up the remaining Oreo cookies and fold into batter.
4) Fill each cupcake cup up 3/4 of the way or enough so that all the batter is used up. But be careful not to overfill it.
5) Bake for 20 mins or until middle is set.
6) Take out and let cool. When fully cool, place in refrigerator for a few hours or overnight.
Serving Size: Makes 12 Cheesecake Cupcakes
