Low Fat Impossibly Easy Cheeseburger Pie

1 package of ground turkey (1.25 lbs)1 cup shredded cheese1 cup skim milk1 onion, chopped1/2 cup heart healthy Bisquick1/2 tsp salt1 tomato, sliced2 tsp parmesan cheese2 eggs
1. Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
2. In 10-inch skillet, cook ground turkey and onion over medium heat 8 to 10 minutes, stirring occasionally, until meat is cooked through; drain. Stir in salt. Spread in pie plate. Sprinkle with shredded cheese.
3. In small bowl, stir bisquick, eggs, and milk with fork or wire whisk until blended. Pour into pie plate.
4. Place sliced tomatoes on top and sprinkle with parmesan cheese
5. Bake about 25 minutes or until knife inserted in center comes out clean.
High Altitude (3500-6500 ft): Bake 30 to 35 minutes.

Super easy. Added clove garlic, taco seasoning, but still thought needed a little more flavor- perhaps will stir in ketchup next time; also cut cheese down to 1/2 cup; subbed almond milk for skim & southwestern egg beaters for eggs. Prolonged oven time for crispier crust, also. Overall, good! - 2/27/11
