Oatmeal Apple pancakes

1 c. quick-cooking oats1 c. whole wheat flour1 Tbs. Truvia Baking Blend1 Tbs. baking powder3/4 tsp. salt1 1/2 tsp. cinnamon1 whole egg2 egg whites1 1/2 Tbs. Canola oil1 3/4 c. plain light Silk soy milk1 Honey Crisp Apple, peeled, cored & diced
Preheat griddle to medium-high; spray with butter-flavor cooking oil.
Combine dry ingredients in large bowl. Beat liquids together, then mix into dry ingredients. Stir in apple pieces.
Ladle 1/2 cup portions onto griddle. Cook until bubbles form, pop and stay open. Flip once, and cook until browned or steam stops rising from pancake. Keep warm before serving.
If desired, serve with butter/margarine and syrup.
