Thai Peanut Chicken

1 1/2 lb boneless skinless chicken breast, cubed1 cup salsa2 Tbsp water2 Tbsp PB22 Tbsp reduced fat peanut butter2 Tbsp lime juice1 Tbsp lite soy sauce1 tsp fresh ginger, minced 1/4 cup unsalted peanuts, chopped 2 Tbsp fresh cilantro, chopped
1. Place chicken in slow cooker.
2. In a small bowl, combine the water and PB2 and stir to form a smooth paste. Stir in peanut butter, salsa, soy sauce, lime juice, ginger together and pour over the top of chicken.
3. Cover and cook on LOW 7 hours
2. To serve: sprinkle with peanuts and cilantro.
