Orange-based turkey stuffing (to go with my orange-stuffed turkey!)

6 slice(s) bacon, chopped into 1/2-inch pieces1 cup chopped onions1 cup chopped celery1 cup chopped carrots1 cup chopped leeks1/2 cup chicken broth2 rind of 2 oranges grated 1 tablespoon fresh thyme1 tablespoon fresh rosemarySalt and pepper, to taste4 cups day‐old Italian bread
1. Sauté bacon in large frying pan till crisp, remove and set aside. Drain off some of the oil, leaving ~1/2 a cup.
2. Add onions, celery, carrots, and leeks; sauté until soft, about 8-10 minutes.
3. Raise heat and add the chicken broth; cook until most of the liquid has reduced. Add the grated orange, herbs, bacon, salt, and pepper to pan and mix well.
4. Now add 4 cups of day‐old Italian bread cut in 1/2- to 3/4-inch cubes to the onion mixture and toss to mix.
5. Pour into oven-safe pyrex and reheat in last 20 mins of cooking turkey.
Serving Size: Makes approximately 8 small servings of stuffing
