1 cup chicken broth (boiled chicken bones)2 cups water1/4 cup shredded spinach1 cup broccolli floretsI diced shallot (small)3 tbsp no salt added tomato sauce4 oz Goya Yello Rice (low sodium)
Pour chicken broth & water into saucepan. Add
shredded spinach, broccoli florets, shallots.
Bring to a boil and add goya dry rice mix. Boil vigorously
5 minutes then set to simmer.
Add tomato sauce and sliced baby bella mushrooms.
Simmer covered 25 minutes.
Serve warm immediately.
