Chipotle Sweet Potato Patties

Ingredients
1 (1 lb) sweet potato, cooked & cooled1/2 cup frozen corn kernels1 (15oz) can low sodium black beans, rinsed & drained1 whole chipotle pepper + 1 tsp adobo sauce, minced1/2 cup cornmeal, divided1/4 tsp garlic powder1/2 tsp cumin1/2 cup cilantro, roughly chopped1 Tbsp olive oil
Directions
1. In a large bowl, combine the corn, black beans, cilantro, half the cornmeal, garlic powder, cumin, chipotle pepper, adobo sauce, and cooled sweet potato and mix until well combined.

2. Using a potato masher, mash the beans throughout the mix until everything is well combined.. Cover and place the mixture in the refrigerator for at least 30 minutes.

3. Divide into four equal sized portions and shape into patties. Use the remaining cornmeal to coat the outside of the patties.

4. Heat 1/2 Tbsp oil in a skillet over a medium heat. Once the oil is hot add two of the patties and cook about 5 - 6 minutes per side, or until golden brown. Repeat with remaining two patties.
