1 tbsp olive oil1 onion, chopped1 leek, sliced2 large stalks celery, sliced2 large carrots, sliced19 oz no-salt-added diced tomatoes3 cups water5 cups turkey or chicken stock1/2 cup dried adzuki beans, soaked overnight and drained1 head roasted garlic (about 15 cloves)1 large sweet potato (350g), peeled and diced2 tsp dried thyme2 tsp dried basil1 tsp dried oregano1 tbsp fresh rosemary1/4 tsp ancho chili powder1 cup CatelliŪ Healthy HarvestŪ Flax Omega-3 rotini 1/2 cup green peas (fresh or frozen)175g green beans285g cooked skinless turkey breast meatsalt and pepperzest and juice of 1/2 lemon
Heat the oil in a large pot over medium heat.
Add the onion, leek, celery and carrots. Cook, stirring often, for 8-10 minutes, until onion has begin to colour.
Add tomatoes, water, stock, adzuki beans, garlic, sweet potato, herbs and chili powder.
Bring to a boil, then reduce heat and simmer, covered, for 45 minutes.
Stir in the pasta, peas, beans and turkey.
Simmer, uncovered, about 15 minutes, until pasta is cooked.
Add salt and pepper to taste, then add lemon zest and juice and serve.
