3 oz Boneless Skinless Chicken Breast1 tsp EVOO1 clove garlic2 oz white wine.25 cup low sodium chicken stock/broth1 Tbs canned capers2 oz frozen peas and carrots
Brown chicken breast and garlic in olive oil over low heat (so the garlic doesn't burn and turn bitter) for 3 minutes each side. Add wine, lemon juice, and stock, simmer for 8 minutes until the sauce thickens to coat the back of a spoon (add a small amount of cornstarch slurry to thicken the sauce even more if desired). Add peas, carrots, and capers, simmer for 2 additional minutes. Serve!
