Turkey Bolognese

Ingredients
28 ounce can of diced tomatoes8 ounces of ground turkey1/2 medium onion chopped2 cloves of garlic (or to taste) or 1 tsp minced garlic4 ounces whole wheat penne rigate pasta3 ounces tomato paste1 medium carrot chopped2 tsp smoke paprika1 tsp cayenne pepper1 tsp italian seasoning
Directions
Cook penne rigate pasta while doing the following:
In a deep frying pan, heat the olive oil. Add crumbled ground turkey and italian seasoning. Stir and cook until the turkey is browned. Add the chopped onion, chopped carrot, and garlic. Stir and cook for 2 minutes. Add the diced tomatoes and tomato paste. Add the smoked paprika and cayenne pepper. Mix thoroughly. Add the frozen vegetables and stir. Strain the pasta and add to the frying pan, stirring thoroughly. Cover and simmer for 20 minutes. Serve hot or store in containers and warm up in microwave when ready to eat.
