Chicken, rocket & roasted radishes

Ingredients
12 radishes, thickly sliced3 cloves garlic, crushed1 tsp olive oil1 Tbl pomegranate molasses100g feta240g chicken breast2 cups arugula2 tsp avocado oil
Directions
Toss radishes, garlic & olive oil in a roasting pan & roast at 180C for 20 minutes or until tender. Cool slightly then toss with feta & pomegranate molasses.

Meanwhile pan-fry the chicken breasts & arrange the arugula (or water cress) on a platter dressed with salt & pepper &, at the last minute, avocado oil.

When chicken is cooked and radishes combined add to the platter & serve.
