Crockpot beef stew

1 TBSP extra virgin olive oil1/2 large bell pepper1 medium onion2 cloves garlic3 cups chopped swiss chard10 oz. leftover bottom round roast beef3 cups cubed potatoes5 cups mixed vegetables1 can crushed tomatoes with basil (28.5 oz. can)1 tsp. celery seed1TBSP Italian seasoning2 cups water1/4 cup flour1/2 cup water
Saute onions, garlic and peppers with olive oil until soft. Add swiss chard until wilted. Put sautéed veggies, beef, potatoes, mixed veggies, tomatoes, celery seed, 1 TBSP Italian seasoning, and 2 cups water in crock pot. Cook on high for 4 hours or low for 6-8 hours or until potatoes are tender. When stew is close to being done and it is boiling, whisk 1/2 cup cold water and 1/4 cup flour together and stir into stew to thicken.
