Cool and Creamy Cucumber Salad

Ingredients
1 and 1/4 cups Yogurt2 Cucumbers, peeled, seeded and diced1 clove Garlic, minced1 Tbsp extra-virgen Olive Oil2 Tbsp fresh Lemon juiceSea salt & Pepper to tasteCayenne Pepper *optional
Directions
Yields: 4 servings

Mix all ingredients well and chill 1-2 hours prior to serving.

Can also be served over grains (brown rice or barley)
