Parmesan Parsley Catfish

Ingredients
4 pounds catfish fillets4 T. finely shredded fresh parmesan1 clove (medium or large) fresh garlic6 or 7 full sprigs fresh parsley2 T. Butter (real is better)1 C. Panko crumbs1 t. dried Basil1 t. Caldo Chicken bullion (or similar)1 t. Tony Chaceres (or similar) Cajun Seasoning
Directions
Preheat oven to 400.

Rinse fish and pat dry. Place on a sprayed baking sheet (like a jelly roll pan---this is juicy).

Whiz rest of ingredients except Tonys in food processer till fine and mixed well. Sprinkle fish with the Cajun Seasoning, then top evenly with the Parsley-cheese mixture, patting it down to make better contact with the fish.

Bake until the fish flakes easily (in my oven it's about 15 minutes, but keep an eye on it) and is white throughout.
