Gazpacho Salad

Ingredients
1/2 medium onion2 medium tomatoes1 bell pepper1 small cucumber2 tbsp. apple cider vinegar1/2 tsp. salt1/4 tsp. ground black pepper1 clove garlic, minced1 packet (1/2 tsp.) stevia sweetener
Directions
Dice onion and rinse in water and drain well. Dice remaining vegetables and add to a large bowl. Toss in the vinegar and spices. Serve room temp.
