spinach and orzo salad

Ingredients
3 tbs olive oil5 cloves garlicJuice and zest of 1 lemon4 oz spinach leaves1lb cooked orzo4 oz chopped feta cheese1/4 cup chopped onion1/4 cup finely chopped fresh mint leaves
Directions
In a small pan, warm oil over medium-low heat. Sauté garlic until lightly golden, 1-2 minutes. Transfer garlic and remaining oil in the pan to a bowl. Add lemon juice whisk to combine. Add Spinach and toss lightly. Add orzo, cheese, onion and mint. Toss to combine and serve
