Pumpkin Black Bean Soup

Ingredients
Pumpkin Black Bean Sou1 T canola oil1 yellow onion chopped4 cloves garlic chopped1 T cumin1T chipotle chili powder4 cups chicken or vegetable broth2 cups pumpkin puree1 19 oz. tin black beans, drained and rinsed1 28 0z tin chopped tomatoes-low sodium
Directions
Saute onions and garlic in oil until soft. Add spices and stir lightly. Add broth, pumpkin, beans and tomatoes and simmer about 30 minutes, stirring occasionally. Cool slightly and puree in blender. Reheat and serve. A garnish of plain Greek yogurt and a few pumpkin seeds tops this soup off nicely--but is not included in the nutrient list.
